Ingredients

  • 2 cups cranberries
  • 1 3/4 cups sugar
  • 1/3 cup quick cooking tapioca
  • 1/4 cup water
  • 2 teaspoons grated orange peel

Instructions

  1. In a saucepan, combine cranberries, sugar, tapioca, water, and orange peel.
  2. Bring to a boil, stirring occasionally.
  3. Remove from heat and stir in the apples.
  4. Cool the filling.
  5. Pour the filling into an unbaked pastry shell coated with a mixture of 1/4 cup flour and 1/4 cup sugar.
  6. Top with uncooked pastry or lattice strips of pastry.
  7. If using a full top crust, cut a few slits in the top crust, slice some margarine and place on top, then sprinkle sugar over.
  8. Bake at 375°F (190°C) for about 50 minutes until golden.
