Sweet and crispy apple latkes combine grated apples with a tender, golden batter, ideal for festive occasions or comforting treats with a dusting of confectioners sugar.

Ingredients

  • 2 eggs
  • 1 1/2 cups orange juice, yogurt or milk
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/4 to 1/2 cup sugar
  • 3 medium apples, peeled and grated
  • vegetable oil
  • confectioners sugar
  • dash of salt

Instructions

  1. Mix eggs with orange juice, yogurt or milk in a bowl.
  2. In a separate bowl, combine flour, baking powder, salt, and sugar.
  3. Add dry ingredients to the egg mixture along with the grated apples.
  4. Heat a thin layer of vegetable oil in a skillet.
  5. Put 1 large tablespoon of batter in the pan at a time.
  6. Cook about 2 minutes on each side until golden brown.
  7. Drain on paper towels.
  8. Sprinkle with confectioners sugar and serve.
