Apple-Sausage Pancakes

- Heat griddle over medium heat or heat electric griddle to 375°F.
- Heat the sausages in a skillet as directed on the package.
- Heat the apple pie filling in a saucepan over low heat.
- Keep the sausages and pie filling warm over very low heat while preparing pancakes. Grease the hot griddle with butter or margarine if necessary.
- Prepare pancakes as directed for thinner pancakes on the baking mix package. After mixing, pour 1/4 cup batter in an oval shape (about 5 inches long and 3 inches wide) onto the hot griddle.
- Cook the pancakes until bubbles form and edges are set, then flip and cook until golden brown.
- Spread each pancake with butter, wrap it around a hot sausage, place folded side down on a plate, and top with a spoonful of apples.
