Sweet and savory apple-sausage pancakes combine tender sausage links, spiced apple filling, and fluffy pancakes, making a hearty breakfast perfect for family mornings or brunch gatherings.

Ingredients

  • 2 (8 oz each) packages fully cooked brown and serve link sausages
  • 1 (21 oz) can apple pie filling
  • 2 cups buttermilk baking mix
  • 1 egg
  • 1 1/3 to 1 1/2 cups milk
  • butter or margarine

Instructions

  1. Heat griddle over medium heat or heat electric griddle to 375°F.
  2. Heat the sausages in a skillet as directed on the package.
  3. Heat the apple pie filling in a saucepan over low heat.
  4. Keep the sausages and pie filling warm over very low heat while preparing pancakes. Grease the hot griddle with butter or margarine if necessary.
  5. Prepare pancakes as directed for thinner pancakes on the baking mix package. After mixing, pour 1/4 cup batter in an oval shape (about 5 inches long and 3 inches wide) onto the hot griddle.
  6. Cook the pancakes until bubbles form and edges are set, then flip and cook until golden brown.
  7. Spread each pancake with butter, wrap it around a hot sausage, place folded side down on a plate, and top with a spoonful of apples.
