Ingredients

  • 4 tsp. curry powder
  • 1/2 c. plain low-fat yogurt
  • 1/3 c. apricot jam
  • 2 Tbsp. Dijon style mustard
  • 1/4 c. toasted coconut
  • 4 whole chicken legs

Instructions

  1. In a glass baking dish, combine curry powder, yogurt, apricot jam, Dijon mustard, toasted coconut, and half teaspoon salt.
  2. Add the whole chicken legs to the dish.
  3. Turn the chicken to coat evenly with the marinade.
  4. Marinate in the refrigerator for 1 to 5 hours before cooking.
