Ingredients

  • 2 chicken breasts, boned and skinned, fat removed
  • 1 Tbsp. grated fresh ginger
  • 1 Tbsp. cornstarch
  • 1 Tbsp. water
  • 1/2 tsp. salt
  • 2 Tbsp. sweet mango chutney, coarsely chopped
  • 2 Tbsp. cider vinegar
  • 1 Tbsp. sugar
  • 2 Tbsp. oil, divided
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, julienned
  • 1 medium carrot, julienned
  • 1/2 tsp. curry powder
  • 4 portions steamed rice

Instructions

  1. Thinly slice chicken breasts across the grain.
  2. In a medium bowl, combine chicken, ginger, cornstarch, water, and salt.
  3. Cover and refrigerate to marinate.
  4. Heat 1 tablespoon of oil in a skillet over medium heat.
  5. Add sliced onion and cook until translucent.
  6. Add julienned red bell pepper and carrot, cook for a few minutes until tender.
  7. In a small bowl, mix mango chutney, cider vinegar, sugar, curry powder, and remaining oil.
  8. Add marinated chicken to the skillet and cook until no longer pink.
  9. Pour the sauce mixture over the chicken and vegetables, cook until heated through.
  10. Serve hot over steamed rice.
