Chicken Indienne
A vibrant Indian-inspired chicken stir-fry featuring tender sliced chicken, fragrant curry powder, sweet mango chutney, and colorful vegetables, perfect for a quick, flavorful meal.
Ingredients
- 2 chicken breasts, boned and skinned, fat removed ⓘ
- 1 Tbsp. grated fresh ginger ⓘ
- 1 Tbsp. cornstarch ⓘ
- 1 Tbsp. water ⓘ
- 1/2 tsp. salt ⓘ
- 2 Tbsp. sweet mango chutney, coarsely chopped ⓘ
- 2 Tbsp. cider vinegar ⓘ
- 1 Tbsp. sugar ⓘ
- 2 Tbsp. oil, divided ⓘ
- 1 medium onion, thinly sliced ⓘ
- 1 red bell pepper, julienned ⓘ
- 1 medium carrot, julienned ⓘ
- 1/2 tsp. curry powder ⓘ
- 4 portions steamed rice ⓘ
Instructions
- Thinly slice chicken breasts across the grain.
- In a medium bowl, combine chicken, ginger, cornstarch, water, and salt.
- Cover and refrigerate to marinate.
- Heat 1 tablespoon of oil in a skillet over medium heat.
- Add sliced onion and cook until translucent.
- Add julienned red bell pepper and carrot, cook for a few minutes until tender.
- In a small bowl, mix mango chutney, cider vinegar, sugar, curry powder, and remaining oil.
- Add marinated chicken to the skillet and cook until no longer pink.
- Pour the sauce mixture over the chicken and vegetables, cook until heated through.
- Serve hot over steamed rice.
