Ingredients

  • 1 cup sugar
  • 8 oz dried apricots
  • 1 cup water
  • 1 box Jiffy pie crust
  • 1 tablespoon butter

Instructions

  1. Cook dried apricots with water and sugar until soft; let cool and use for filling the next day.
  2. Prepare the Jiffy pie crust mixture according to package instructions.
  3. Roll out the pie crust until 1/4-inch thick.
  4. Cut out small rounds from the rolled dough.
  5. Place a large spoonful of apricot filling on each dough round.
  6. Fold the dough over the filling to form a semi-circle and seal the edges.
  7. Place the filled pies on a greased cookie sheet.
  8. Bake in a preheated 450°F oven for 20 minutes until golden.
  9. Top with powdered sugar icing before serving.
