Ingredients

  • 20 oz. can crushed pineapple plus juice
  • 8 oz. package cream cheese
  • 6 oz. or 2 x 3 oz. packages apricot jello
  • Junior size jar strained apricot baby food
  • 2/3 cup sugar

Instructions

  1. Combine crushed pineapple with juice, cream cheese, apricot jello, apricot baby food, and sugar in a saucepan.
  2. Heat all ingredients until almost boiling, stirring frequently.
  3. Cool the mixture until syrupy but not jelled.
  4. Whip chilled evaporated milk in a large mixer bowl.
  5. Add the syrupy mixture to the whipped milk on low speed and mix well.
  6. Pour into a pan or bowl.
  7. Chill until set before serving.
