Ingredients

  • 1 (18 1/2 oz.) package white cake mix
  • 1 1/4 cups water
  • 3 egg whites
  • 1 tablespoon grated orange peel
  • 1 teaspoon orange or lemon extract

Instructions

  1. In a mixing bowl, combine the cake mix, water, egg whites, orange peel, and orange or lemon extract; beat on low speed for 30 seconds until moistened.
  2. Beat on high speed for 2 minutes.
  3. Pour the batter into two greased and floured 8-inch round cake pans.
  4. Bake at 350°F for 30 to 35 minutes or until a toothpick inserted near the center comes out clean.
  5. Cool the cakes for 10 minutes, then remove from pans to a wire rack to cool completely.
  6. Split each cake layer horizontally into two layers.
  7. Spread 1/3 cup apricot preserves on the cut side of each bottom layer.
  8. Replace the top layers to complete the cake.
