Arabic Upside-Down Chicken features tender chicken, fragrant spices, and roasted cauliflower layered over rice, creating a flavorful and comforting dish perfect for family dinners.

Ingredients

  • cauliflower
  • chicken pieces
  • 1 cup rice
  • olive oil

Instructions

  1. Cut and wash the cauliflower.
  2. Boil chicken in water with small amounts of allspice, nutmeg, cinnamon, and a small piece of lemon.
  3. Wash or soak rice for about 10 minutes.
  4. Put olive oil, cumin, garlic salt, and regular salt in the bottom of a casserole dish and season to taste.
  5. Place the cooked chicken in the casserole dish, then layer with cauliflower, then rice.
  6. Pour the broth from the chicken over the ingredients, adding water if needed to cover completely.
  7. Dot with butter and cook in the oven on high for about 10 minutes.
  8. Lower the oven temperature to medium-high and cook until the rice is tender.
