Ingredients

  • 9-inch unbaked pastry shell
  • 2 cups pumpkin
  • 14 oz. can Eagle Brand sweetened condensed milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine pumpkin, sweetened condensed milk, ground cinnamon, ground ginger, nutmeg, and salt. Mix well.
  3. Pour the mixture into the unbaked pastry shell.
  4. Bake at 425°F (220°C) for 15 minutes.
  5. Reduce the oven temperature to 350°F (175°C).
  6. Bake for an additional 35 to 40 minutes or until a knife inserted 1 inch from the edge comes out clean.
  7. Cool the pie for several hours or overnight in the refrigerator.
  8. Garnish as desired and serve.
