Ingredients

  • 3 c. plain flour
  • 2 c. sugar
  • 1 tsp. soda
  • 1 tsp. salt
  • 3 eggs
  • 1 1/2 c. cooking oil
  • 8 oz. can crushed pineapple and juice
  • 2 tsp. vanilla
  • 2 c. diced bananas or 1 1/2 c. applesauce

Instructions

  1. Sift together flour, sugar, soda and salt.
  2. Add eggs, cooking oil, pineapple and juice, vanilla and bananas or applesauce.
  3. Mix up like cornbread (not in a mixer).
  4. Bake in tube pan at 350° for 1 hour and 20 minutes.
