Ingredients

  • 1 c. coarse yellow corn meal
  • 2 c. flour
  • 1 1/2 c. sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 4 eggs, separated (save whites)
  • 1 tsp. vanilla

Instructions

  1. Combine in a bowl the dry ingredients (corn meal, flour, sugar, baking powder and salt).
  2. Combine egg yolks with vanilla, half and half and margarine or butter; add to dry ingredients. Stir until moistened.
  3. Beat egg whites until stiff, but not dry. Fold into mixture.
  4. Pour into well-greased 9 x 13-inch pan.
  5. Bake at 350° for 25 to 30 minutes.
