Artichoke Shrimp

Ingredients

  • 2 lb. peeled deveined shrimp
  • 1 can artichoke hearts, drained
  • 1 bell pepper, cut into chunks
  • 1/2 c. wine (whatever you have)
  • 2 small cans sliced mushrooms (you may also use fresh)
  • 2 Tbsp. peanut or olive oil
  • salt and pepper to taste
  • 2 Tbsp. cornstarch for thickening
  • 1/2 tsp. Kitchen Bouquet for coloring (add more if needed)

Instructions

  1. Put oil (about 2 tablespoons) in pot you will use to cook in. Put chopped onions and shrimp in pot and stir around until shrimp are pink.
  2. Add all the rest of ingredients except cornstarch. Bring mixture to boil and cook about 15 minutes.
  3. Add dissolved cornstarch to thicken.
  4. Serve over rice or noodles.
  5. Can substitute boneless cubed chicken or cubed beef for shrimp.
  6. Cook longer.
