Artichoke Shrimp
Ingredients
- 2 lb. peeled deveined shrimp ⓘ
- 1 can artichoke hearts, drained ⓘ
- 1 bell pepper, cut into chunks ⓘ
- 1/2 c. wine (whatever you have) ⓘ
- 2 small cans sliced mushrooms (you may also use fresh) ⓘ
- 2 Tbsp. peanut or olive oil ⓘ
- salt and pepper to taste ⓘ
- 2 Tbsp. cornstarch for thickening
- 1/2 tsp. Kitchen Bouquet for coloring (add more if needed) ⓘ
Instructions
- Put oil (about 2 tablespoons) in pot you will use to cook in. Put chopped onions and shrimp in pot and stir around until shrimp are pink.
- Add all the rest of ingredients except cornstarch. Bring mixture to boil and cook about 15 minutes.
- Add dissolved cornstarch to thicken.
- Serve over rice or noodles.
- Can substitute boneless cubed chicken or cubed beef for shrimp.
- Cook longer.
