Ingredients

  • 1/2 lb. asparagus, cleaned
  • 1 small onion, chopped
  • 3 eggs

Instructions

  1. Wash the asparagus and cut off the hard ends.
  2. Cut the asparagus into quarter-inch pieces.
  3. In a skillet, combine the asparagus pieces, chopped onion, and a small amount of oil.
  4. Simmer until the asparagus is nearly cooked but still tender.
  5. Break the eggs on top of the mixture and stir to combine.
  6. Cook the mixture as you would scrambled eggs until the eggs are set and cooked through.
