Assorted Vegetables (Namool) Recipe
Ingredients
- 1 bn spinach ⓘ
- 9 ounce daikon radish, peeled & thinly julienned ⓘ
- 2 ounce carrot, peeled & thinly julienned ⓘ
- 1/4 tsp salt ⓘ
- 10 1/2 ounce soybean sprouts
- 7 ounce fiddlehead, cooked ⓘ
- 1 Tbsp. sesame oil
- 1 tsp grnd sesame seeds salt
- 1 Tbsp. chopped green onion ⓘ
- 1 Tbsp. sesame oil ⓘ
- 1/2 tsp salt ⓘ
- 1/2 tsp grnd sesame seeds
- 1 Tbsp. vinegar ⓘ
- 2 tsp sugar ⓘ
- 2 tsp grnd sesame seeds ⓘ
- 1 tsp crushed garlic ⓘ
Instructions
- Wash spinach well and cook in boiling salted water to wilt.
- Blanch in cool water.
- Drain, and squeeze out excess water.
- Cut spinach into 1-1/2 inch lengths.
- Add in Spinach Seasonings and mix well.
- Place daikon and carrot in a bowl and sprinkle with 1/4 tsp.
- salt.
- Let stand 10 min, then lightly squeeze out water.
- Add in daikon/carrot seasonings and mix well.
- Throw away roots of soybean sprouts.
- Wash and place sprouts into a pan with sufficient water to cover and a healthy pinch of salt.
- Cover and cook over medium heat for 10 min.
- Drain well and cold.
- Fold in beansprout seasonings.
- Drain fiddlehead.
- Stir fry in 1 Tbsp.
- sesame oil.
- Add in beansprout seasonings to taste.
- Cook down and sprinkle with grnd sesame seeds.
- Arrange cold vegetables in separate sections on serving dish, or possibly present in individual bowls.
