Ingredients

  • 1 1/4 c. crackers (not fine)
  • 1 tsp. vanilla
  • 1/4 c. sugar
  • 2 egg yolks
  • 1/4 c. coconut

Instructions

  1. Cook all ingredients together in a saucepan, stirring until well combined and heated through.
  2. Beat the egg whites until stiff peaks form.
  3. Spread or spoon the beaten egg whites over the hot cracker mixture.
  4. Brown in the oven until the top is golden.
