Ingredients

  • 15 oz. can sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 teaspoon grated lemon rind
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2/3 cup butter or margarine
  • 1 cup dark brown sugar
  • 1 cup oatmeal

Instructions

  1. Mix sweetened condensed milk with lemon juice and grated lemon rind. Set aside.
  2. Mix flour, baking powder, salt, butter or margarine, brown sugar, and oatmeal to form a crumbly mixture.
  3. Pat two-thirds of the mixture into the bottom of a 9 x 11-inch pan, pressing firmly. Save the remaining one-third for topping.
  4. Pour the lemon and condensed milk mixture over the crust in the pan.
  5. Sprinkle the remaining crumbs evenly over the top, pressing down firmly.
  6. Bake at 350°F (175°C) for 1 hour or until golden and set.
  7. Allow to cool before cutting into squares.
  8. Decorate with cherry bits before serving and store in an airtight tin in the refrigerator.
