Ingredients

  • 4 (8 oz.) packages cream cheese
  • 2 lb. sour cream
  • 6 eggs
  • 2 1/2 cups sugar
  • 2 teaspoons vanilla
  • 1 1/4 teaspoons salt
  • 4 tablespoons cornstarch
  • 1 bag graham cracker crumbs

Instructions

  1. Combine softened cream cheese and sugar in a large mixing bowl.
  2. Add eggs, one at a time, beating on high after each addition.
  3. Add half of the salt, vanilla, cornstarch, and sour cream; mix well.
  4. Add the remaining half of the salt, vanilla, cornstarch, and sour cream; mix until well combined.
  5. Grease a 9 x 3 3/4-inch spring-form pan with butter or margarine.
  6. Line the bottom of the pan with 1/2 cup graham cracker crumbs.
  7. Pour the cheesecake batter into the prepared pan.
  8. Bake at 375°F for 1 hour.
  9. Turn off the oven and leave the cheesecake inside with the door closed for an additional hour.
