Ingredients

  • 6 ears corn
  • 1 cup sifted flour
  • 2 teaspoons sugar
  • 1 1/4 teaspoons salt
  • 2 1/2 teaspoons baking powder
  • 1 whole egg
  • 1/2 cup melted shortening

Instructions

  1. Select 6 ears of corn just beyond the 'milk stage'.
  2. Cut off the cob and remove all juice, as you would for cream-style corn; you should have about 2 1/2 cups of corn.
  3. Sift the flour, salt, baking powder, and sugar together over the raw corn; mix thoroughly.
  4. Stir in the well-beaten egg alternately with the melted shortening.
  5. Pour the mixture into a shallow pan.
  6. Bake in a preheated oven at 425°F (220°C) for 30 to 35 minutes until golden brown.
