Ingredients

  • 1 chicken, cut up in pieces
  • 1 jar apricot preserves or orange marmalade (10 or 12 oz.)
  • 1 bottle Russian dressing (8 oz.)
  • dash of salt

Instructions

  1. Wash and dry the chicken pieces.
  2. Combine apricot preserves (or orange marmalade), Russian dressing, salt, and pepper; mix well.
  3. Add chicken to the sauce, ensuring all pieces are coated.
  4. Place the coated chicken in a casserole or oblong baking dish, cover tightly, and refrigerate overnight.
  5. Before baking, mix the chicken and sauce together.
  6. Bake at 350°F for about 1 hour or until the chicken is tender.
  7. Remove from oven, transfer to a serving platter, and pour the remaining sauce over the chicken.
