Ingredients

  • 1/2 bell pepper, chopped fine
  • 2 blades celery, chopped fine
  • 1 med. onion, chopped fine
  • 1 tsp. black pepper
  • 2 Tbsp. Tobasco sauce
  • 1/2 cup catsup
  • 1 tsp. salt
  • 3 chicken bouillon cubes
  • 1/4 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 2 15 oz. cans black-eyed peas
  • 1 15 oz. can RoTel tomatoes
  • 1 clove garlic, pressed
  • 1 tsp. sugar
  • 1 Tbsp. flour
  • 1/2 cup bacon drippings

Instructions

  1. Combine the chopped bell pepper, celery, onion, black pepper, Tabasco sauce, catsup, salt, chicken bouillon cubes, nutmeg, and cinnamon in a saucepan.
  2. Cook over low heat, stirring, until the mixture reaches a boil and the bouillon cubes are dissolved.
  3. Add the drained black-eyed peas, RoTel tomatoes, pressed garlic, and sugar to the saucepan.
  4. Simmer the mixture for 30 minutes.
  5. Mix the bacon drippings with the flour and stir into the peas mixture.
  6. Cook for an additional 10 minutes, stirring well.
  7. Serve hot with corn chips.
