Ingredients

  • 3 ripe avocados
  • 6 to 8 oz. baby shrimp, rinsed and drained
  • 1/3 cup mayonnaise
  • 1 tablespoon parsley flakes or vegetable flakes
  • 3 oz. cheddar cheese, thinly sliced
  • 1/4 teaspoon salt

Instructions

  1. Mix shrimp, mayonnaise, parsley flakes, and salt in a bowl.
  2. Cut avocados in half and remove the stones.
  3. Spoon the shrimp mixture onto each avocado half.
  4. Top each with a slice of cheddar cheese.
  5. Place the avocado halves under the broiler.
  6. Cook for about 1 to 2 minutes until the cheese melts.
