Ingredients

  • 1/2 c. shortening
  • 1 c. sugar
  • 2 eggs
  • 1 1/2 c. ripe avocado, mashed
  • 1 tsp. lime or lemon juice
  • 2 c. sifted all-purpose flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. pecans, chopped

Instructions

  1. Beat shortening and sugar together.
  2. Add eggs, avocado, lime or lemon juice, flour, baking powder,
  3. salt
  4. and
  5. pecans; blend. Pour into greased loaf pan and bake in 375° oven for 1 hour and 15 minutes.
