Creamy avocado and cottage cheese spread seasoned with onion, lemon, Worcestershire, and Tabasco, layered with chicken and celery on toasted rye for flavorful, easy appetizers.

Ingredients

  • 1/2 cup cottage cheese
  • 1/2 avocado, peeled and cut into pieces
  • 1 tablespoon grated fresh onion
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon Worcestershire sauce
  • 3 drops Tabasco
  • 3/4 cup chopped cooked chicken
  • 1/4 cup chopped celery
  • party rye slices, toasted and buttered

Instructions

  1. Put cottage cheese and avocados into an electric blender and blend until smooth.
  2. Blend in onion, lemon juice, Worcestershire sauce, and Tabasco.
  3. Stir in cooked chicken and chopped celery.
  4. Chill the mixture for several hours or overnight.
  5. Spread about 1 tablespoon of the mixture on each toasted and buttered rye toast slice.
  6. Garnish each with pimento before serving.
