Ingredients

  • 2 cups dried navy white beans
  • 3/4 stick butter
  • 5 tablespoons good quality olive oil
  • 1 1/2 teaspoons summer savory or dried marjoram
  • 3/4 cup chopped, seeded, peeled, fresh tomatoes
  • salt to taste

Instructions

  1. Pick over the beans and rinse well.
  2. Cover the beans with water and bring to a boil for 5 minutes.
  3. Allow the beans to stand in the water, uncovered, for 1 hour.
  4. Drain the beans and place them in a saucepan with water to cover.
  5. Simmer, partially covered, until the beans are tender but not mushy, about 45 minutes.
  6. Heat the butter and olive oil in a heavy saucepan.
  7. Add the cooked beans, herbs, tomatoes, salt, and white pepper.
  8. Cook for 5 to 8 minutes, until flavors meld.
