Baba Ghannouj is a smoky, creamy Middle Eastern eggplant dip flavored with tahini, garlic, and lemon, perfect for sharing as an appetizer or party spread.

Ingredients

  • 1 medium eggplant
  • 1/4 cup lemon juice
  • 1/4 cup tahini
  • 2 cloves garlic
  • 2 teaspoons salt
  • 1 tablespoon olive oil
  • 1/4 cup finely chopped parsley

Instructions

  1. Grill the eggplant over a charcoal fire for 30 to 40 minutes, turning frequently.
  2. Alternatively, place the eggplant on the center shelf in a hot oven and cook until soft, turning often.
  3. Once cooked and cooled, peel the eggplant and mash or blend it until smooth.
  4. Mix the mashed eggplant with lemon juice, tahini, minced garlic, salt, and olive oil.
  5. Garnish with finely chopped parsley before serving.
