  • 2 cakes yeast

Instructions

  2. Prepare a mixture of beaten egg yolks, sugar, salt, softened butter, unbeaten egg whites, lemon or orange juice, and grated citrus rind. Beat in a mixer until smooth.
  3. Fold in the white raisins into the egg mixture.
  4. Add this mixture to the yeast mixture along with 4 more cups of sifted flour or enough to make a soft dough.
  5. Knead thoroughly by hand.
  6. Put the dough in small tube pans or form a round loaf with 2 strips of dough over the top to form a cross.
  7. Cover and let rise again.

  9. Bake at 350°F (175°C) for 40 to 45 minutes until golden brown.
