Ingredients

  • 3 to 4 lb. country backbone ribs
  • 2 c. chopped celery
  • 2 c. chopped onions
  • 2 tsp. salt
  • 2 tsp. pepper
  • 8 c. water

Instructions

  1. Put ribs, celery, onions, salt, pepper, and water in a large covered pot and cook on high until it boils.
  2. Reduce heat to low, cover, and simmer for 2 to 3 hours until the meat falls off the bones. Allow to cool enough to handle.
  3. Remove the meat from the bones and put it in another covered saucepan.
  4. Add the rice and 4.5 cups of the stock with the celery and onions to the saucepan.
  5. Taste the stock for salt and add more if needed.
  6. Cover and simmer on low heat until the rice is done and the liquid is absorbed.
  7. Check occasionally and add a little more stock if the rice is not done and all liquid has been absorbed.
