Ingredients

  • 4 slices bacon
  • 4 large yellow squash, sliced
  • 2 green onions, sliced
  • 1 egg, beaten
  • 1/2 cup sour cream
  • 1/2 cup Swiss cheese, shredded
  • 3/4 cup Cheddar cheese, shredded

Instructions

  1. Cook bacon, drain, crumble, and reserve drippings.
  2. Saute squash and green onions in bacon drippings for 8 to 10 minutes.
  3. Combine beaten egg and sour cream, then add to the squash and onion mixture.
  4. Stir in half of the bacon pieces.
  5. Spoon half of the squash mixture into a greased 2-quart casserole dish.
  6. Sprinkle Swiss cheese on top of the first layer.
  7. Add the remaining squash mixture to the casserole.
  8. Sprinkle Cheddar cheese on top of the second layer.
  9. Sprinkle remaining bacon on top.
  10. Bake at 350°F for 20 minutes or until bubbly.
