Ingredients

  • 8 potatoes, cooked and diced
  • 1 lb. American cheese, cut in strips
  • 1 cup mayonnaise
  • 1/2 cup chopped onion
  • salt and pepper to taste
  • 1/2 lb. bacon, chopped and partially cooked

Instructions

  1. Mix the cooked and diced potatoes, American cheese strips, mayonnaise, chopped onion, salt, and pepper together in a bowl.
  2. Pour the mixture into a 9 x 13-inch baking dish.
  3. Top the casserole evenly with chopped and partially cooked bacon.
  4. Bake in a preheated oven at 325°F (163°C) for 1 hour until heated through and golden on top.
