Ingredients

  • 6 large baking potatoes
  • 1/4 cup butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup sour cream
  • Grated Swiss cheese or Parmesan cheese

Instructions

  1. Scrub, pierce, and bake potatoes at 425°F for 1 hour or until tender.
  2. Cool slightly.
  3. Break the potatoes in half lengthwise and scoop the insides into a large bowl.
  4. Beat in butter, salt, pepper, and sour cream until smooth.
