Ingredients

  • 1 cup sugar
  • 2 heaping tablespoons cornstarch
  • 2 heaping tablespoons cocoa
  • 2 eggs
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1 1/2 tablespoons butter
  • 1 teaspoon vanilla
  • 1 baked 9-inch pie crust

Instructions

  1. Bake the pie crust according to the package instructions and let it cool.
  2. Heat the milk in a double boiler until warm.
  3. In a separate bowl, mix sugar, salt, cornstarch, and cocoa well; set aside.
  4. Beat the egg yolks slightly, then add 1/3 cup of the warmed milk to the yolks and mix.
  5. Pour the egg mixture back into the warm milk in the double boiler.
  6. Add the sugar, salt, cornstarch, and cocoa mixture to the double boiler.
  7. Stir constantly over medium heat until the mixture thickens.
  8. Remove from heat and add butter and vanilla, stirring until smooth.
  9. Allow the filling to cool slightly before pouring into the baked pie shell.
  10. Top the pie with meringue and serve.
