Baked Cheesy Squash

Ingredients

  • 1 Pound Yellow Squash
  • 2 Lightly Beaten Eggs
  • 1 Cup Grated Cheddar Cheese
  • 3 Tablespoons Melted Butter
  • 1/2 Teaspoon Salt
  • 1/8 Teaspoon Pepper

Instructions

  1. Prheat oven 400 Degrees
  2. Grease a 1 1/2 quart casserole dish.
  3. Slice yellow squash (about 1/2 inch thick) and cook in about 1 cup water. Cook for 10 minutes and drain well.
  4. Meantime, combine eggs, cheese, salt, pepper, & butter. Stir well.
  5. After squash has drained, add it to the above mixture and stir well. Put into casserole dish.
  6. Combine TOPPING ingredients and sprinkle over squash.
  7. Bake for about 25 minutes.
