  1. Rinse chicken pieces and set in a colander to drain, then in a large bowl, mix cracker meal and Lawry's seasoning.
  2. Roll chicken in cracker meal mixture and set aside.
  3. In a large bowl, mix eggs and evaporated milk.
  4. Roll chicken in egg mixture, then thoroughly back in cracker meal and set on a platter.
  5. Cover chicken with wax paper and refrigerate for about 4 hours or overnight.
  6. Brown chicken in lard and set on a rack in a baking pan; add a little water.
  7. Cover with foil and bake at 350°F for 2 to 2 1/2 hours.
  8. Let cool to a warm temperature and serve.
