Ingredients

  • 2 cups instant rice
  • 2 cups boiling water
  • 2 to 4 tablespoons instant minced onion
  • 4 cups cooked turkey pieces
  • 10 oz frozen peas
  • 1 can cheese soup
  • 1 can cream of chicken or mushroom soup
  • 2 cups milk
  • 2 cups crushed cheese crackers

Instructions

  1. Mix rice, boiling water, and instant minced onion in a bowl.
  2. Cover the bottom of a greased 14 x 9-inch casserole dish with the rice mixture.
  3. Place cooked turkey pieces over the rice.
  4. Sprinkle frozen peas over the turkey.
  5. Combine cheese soup, cream of chicken or mushroom soup, and milk; pour over the casserole.
  6. Mix crushed cheese crackers with melted butter; pour over the top of the casserole.
  7. Bake at 350°F for 45 minutes until bubbly and golden.
