Ingredients

  • 1 c. mashed potatoes
  • 1/4 c. potato water (warm)
  • 3/4 c. shortening
  • 1 tsp. salt
  • 1 cake yeast
  • 1 c. scalded milk
  • 1/2 c. sugar
  • 2 eggs
  • 4 1/2 c. flour

Instructions

  1. Add shortening, sugar and salt to the scalded milk; cool to lukewarm.
  2. Dissolve the cake yeast in the potato water and add to the mixture.
  3. Add mashed potatoes and beaten eggs; blend well.
  4. Work in flour gradually to form a soft dough.
  5. Cover and let rise until light, about 1 hour.
  6. Place on a floured board and knead until smooth.
  7. Roll dough about 1/2-inch thick.
  8. Cut into donut shapes or rounds with a cutter.
  9. Bake at 425°F until delicate brown, about 12-15 minutes.
  10. Brush with melted butter while still warm.
  11. Roll in powdered sugar, white sugar, or cinnamon sugar before serving.
