Baked Flounder Supreme features tender flounder fillets stuffed with crab meat, coated with seasoned crumbs, and baked to perfection. A delightful, elegant dish for seafood lovers.

Ingredients

  • 1 1/2 lb. fillets of flounder
  • 1 cup cracker crumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 egg
  • 2 tablespoons water
  • 6 1/2 oz. can crab meat, drained and flaked
  • paprika

Instructions

  1. Preheat oven to 425°F.
  2. Line 5 custard cups with aluminum foil and set on a baking sheet.
  3. Cut fillets into long strips.
  4. On waxed paper, combine cracker crumbs, salt, and pepper.
  5. Coat fish strips with crumb mixture, dip in beaten egg with water, then coat again with crumbs.
  6. Lay coated fish strips flat on the table.
  7. Spread crab meat over each fish strip.
  8. Roll up each strip like a jelly roll and secure with wooden picks.
  9. Place a pat of butter or margarine in each cup.
  10. Place the fish roll on top of the butter in each cup.
  11. Sprinkle with paprika and dot with butter or margarine.
  12. Bake in the preheated oven for 20 minutes.
