Ingredients

  • 1 (5 lb.) young groundhog
  • 6 potatoes, sliced
  • 6 carrots, sliced
  • 1 medium onion, sliced or diced
  • 2 stalks celery, sliced
  • 2 c. water
  • 1 tsp. salt

Instructions

  1. Clean the groundhog thoroughly.
  2. Put the groundhog in a pot and bring to a boil; cook for 10 minutes.
  3. Turn the pot head down and cook for an additional 20 minutes.
  4. Remove the groundhog from the pot.
  5. Place the groundhog in a baking pan.
  6. Bake at 350° for 1 1/2 hours or until very tender.
  7. Add 1 cup of water from the pot to the baking pan.
  8. Add all ingredients 1/2 hour before the groundhog is done.
