Ingredients

  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 2 large baking potatoes (10 oz. each), scrubbed
  • 1 teaspoon dried basil or thyme leaves, crumbled
  • 2 teaspoons lemon juice

Instructions

  1. Mix Parmesan cheese, dried basil or thyme, and black pepper in a bowl.
  2. Halve the baking potatoes lengthwise.
  3. Brush the cut surfaces of the potatoes with lemon juice and melted butter.
  4. Dip the coated cut sides into the cheese mixture.
  5. Place the coated sides down in a spoke pattern on a glass pie plate.
  6. Microwave on High for 14 to 16 minutes, rotating the dish one-half turn once, until potatoes are tender and edges are lightly browned.
  7. Hold the plate up to check doneness.
  8. Let the potatoes stand for 2 minutes before serving.
