Apple Fruit Bread

Ingredients
- 1 1/2 cups all-purpose flour ⓘ
- 3/4 cup sugar ⓘ
- 3/4 teaspoon baking soda ⓘ
- 1/2 teaspoon ground nutmeg ⓘ
- 1/4 to 1/2 teaspoon ground cinnamon ⓘ
- 1/4 teaspoon salt ⓘ
- 1 egg, lightly beaten ⓘ
- 1/3 cup apple juice ⓘ
- 1 large tart apple, peeled and coarsely chopped ⓘ
- 1/4 cup raisins ⓘ
- 1/3 cup chopped walnuts ⓘ
- 1/4 cup maraschino cherries, halved ⓘ
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8 x 4 x 2-inch loaf pan.
- In a bowl, combine the flour, sugar, baking soda, nutmeg, cinnamon and salt.
- In another bowl, beat the egg lightly and mix in the apple juice, raisins, walnuts, and cherries.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 55 minutes or until a toothpick inserted near the center comes out clean.
- Cool the bread in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
