Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 1/4 to 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 egg, lightly beaten
  • 1/3 cup apple juice
  • 1 large tart apple, peeled and coarsely chopped
  • 1/4 cup raisins
  • 1/3 cup chopped walnuts
  • 1/4 cup maraschino cherries, halved

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8 x 4 x 2-inch loaf pan.
  2. In a bowl, combine the flour, sugar, baking soda, nutmeg, cinnamon and salt.
  3. In another bowl, beat the egg lightly and mix in the apple juice, raisins, walnuts, and cherries.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50 to 55 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool the bread in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
