Ingredients

  • 1 box mochiko
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 (12 oz.) can coconut milk
  • 2 cups water
  • food coloring (optional)
  • katakuri (potato starch)

Instructions

  1. Mix dry ingredients, except potato starch.
  2. Add water and coconut milk gradually until well mixed.
  3. Add vanilla and optional food coloring.
  4. Pour the mixture into a greased 9 x 13-inch pan.
  5. Cover with foil and bake in a 350°F oven for 1 hour.
  6. Ensure it is not underbaked; overbake slightly for best texture.
  7. Cool completely after baking.
  8. Cut into smaller pieces and roll in potato starch.
