- Scrub oyster shells thoroughly.
- Rinse shells under cold running water.
- Open oysters using the method recommended by the Fishery Council.
- Discard the flat shell.
- Keep the deep halves for use.
- Preheat oven to moderately hot (400°F).
- Melt butter and season with finely cut parsley and freshly ground black pepper.
- When butter is slightly cooled, roll each oyster in the butter to barely coat it.
- Return the oyster to its shell.
- Squeeze lemon juice over the oysters and cover each with bread crumbs.
- Place the filled shells in a shallow baking pan.
- Bake for 5 minutes.
- Add a light sprinkling of salt to the oysters and continue baking for 3 minutes.
- Serve hot.
