Ingredients

  • 2 dozen large oysters in shell
  • 1 cup butter
  • 2 Tbsp finely cut parsley
  • freshly ground black pepper
  • 1 lemon
  • 1 1/2 cups buttered bread crumbs
  • 1 1/2 tsp salt

Instructions

  1. Scrub oyster shells thoroughly.
  2. Rinse shells under cold running water.
  3. Open oysters using the method recommended by the Fishery Council.
  4. Discard the flat shell.
  5. Keep the deep halves for use.
  6. Preheat oven to moderately hot (400°F).
  7. Melt butter and season with finely cut parsley and freshly ground black pepper.
  8. When butter is slightly cooled, roll each oyster in the butter to barely coat it.
  9. Return the oyster to its shell.
  10. Squeeze lemon juice over the oysters and cover each with bread crumbs.
  11. Place the filled shells in a shallow baking pan.
  12. Bake for 5 minutes.
  13. Add a light sprinkling of salt to the oysters and continue baking for 3 minutes.
  14. Serve hot.
