Ingredients

  • 1 1/4 lb. bulk Italian sausage
  • 1 (15 oz.) container Ricotta cheese
  • 1/2 tsp. nutmeg
  • 1 tsp. salt
  • 1/2 tsp. white pepper
  • 2 Tbsp. chopped parsley
  • 3 c. tomato sauce
  • 1 lb. rigatoni
  • 1/4 c. grated Parmesan cheese

Instructions

  1. Cook rigatoni until al dente; keep warm.
  2. In a skillet, brown the Italian sausage, breaking it up until no pink remains.
  3. Drain thoroughly and set aside.
  4. In a medium bowl, mix ricotta cheese, nutmeg, salt, white pepper, and chopped parsley.
  5. Generously grease a 9 x 13-inch baking pan.
  6. Spoon one-third of the tomato sauce over the bottom of the pan.
  7. Layer half of the cooked rigatoni on top of the sauce.
  8. Spread all of the cooked sausage over the rigatoni.
  9. Spread the ricotta mixture evenly over the sausage.
  10. Add the remaining cooked rigatoni in an even layer.
  11. Pour the remaining tomato sauce over the top.
  12. Sprinkle grated Parmesan cheese evenly over all.
  13. Cover the pan with foil and bake in a preheated 400°F oven for 15 minutes.
  14. Remove the foil and bake for an additional 5 to 10 minutes, or until browned and bubbling.
