Ingredients

  • 2 cups rice
  • 4 cups crushed pineapple
  • 11 tablespoons butter
  • 1.5 cups brown sugar
  • 1.5 cups pineapple juice

Instructions

  1. Boil the rice until cooked and then drain.
  2. Drain the crushed pineapple.
  3. In a buttered baking dish, place a quarter of the rice as the first layer.
  4. Cover the rice with half of the crushed pineapple.
  5. Repeat the layering with the remaining rice and pineapple.
  6. Dot each layer with butter and brown sugar.
  7. Pour pineapple juice over the top.
  8. Cover and bake at 350°F for 1 hour, or until the dish is browned.
