Baked Potato Mice

Baked Potato Mice are charming and tasty finger foods, featuring crispy, sliced potatoes topped with cheese and decorated with parsley to resemble mice. Perfect for parties or fun family dinners, they combine crispy textures with cheesy flavors and a touch of fresh herbs for an inviting presentation.

Ingredients

  • 1 tsp. salt
  • 4 medium potatoes
  • 2 to 3 Tbsp. melted butter
  • 2 to 3 Tbsp. chopped herbs (such as parsley, chives, sage, thyme)
  • 4 Tbsp. grated Cheddar cheese
  • 1 1/2 Tbsp. Parmesan cheese
  • parsley tail and stem

Instructions

  1. Peel the potatoes.
  2. Cut each potato into thin slices, not all the way through, using the handle of a spoon to prevent slicing completely.
  3. Place the sliced potatoes in a baking dish, fanning them slightly.
  4. Sprinkle salt over the potatoes and spread melted butter on top.
  5. Sprinkle chopped herbs over the potatoes.
  6. Bake at 450°F (232°C) for 50 minutes.
  7. Remove from the oven.
  8. Sprinkle grated Cheddar cheese on top.
  9. Bake for an additional 7 to 10 minutes until cheese is melted and bubbly.
  10. Add parsley ears and tail from parsley stem to resemble mice.
