- Bake potatoes on the center rack of a 450°F preheated oven until soft.
- Cut a thin slice lengthwise from the top of each potato.
- Scoop out the flesh, keeping the shells intact.
- Discard the tops of each potato.
- Mash the flesh with a mixer and add sour cream and salt.
- Mix until fluffy, adding a little milk if you prefer it thinner.
- Add grated Cheddar cheese and mix well.
- Fill the potato shells with the mashed mixture.
- Sprinkle with paprika before serving.
