Stuffed baked potatoes filled with creamy mashed flesh, cheddar cheese, and a hint of paprika, perfect for a comforting and flavorful vegetarian meal or side dish.

Ingredients

  • 4 medium baking potatoes
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 cup grated Cheddar cheese
  • paprika (a sprinkle)

Instructions

  1. Bake potatoes on the center rack of a 450°F preheated oven until soft.
  2. Cut a thin slice lengthwise from the top of each potato.
  3. Scoop out the flesh, keeping the shells intact.
  4. Discard the tops of each potato.
  5. Mash the flesh with a mixer and add sour cream and salt.
  6. Mix until fluffy, adding a little milk if you prefer it thinner.
  7. Add grated Cheddar cheese and mix well.
  8. Fill the potato shells with the mashed mixture.
  9. Sprinkle with paprika before serving.
