Ingredients

  • 6 yellow squash, each cut lengthwise
  • 1 small onion, chopped
  • 1 can (15 oz.) tomato sauce
  • Dried oregano to taste
  • 2-3 cups grated mozzarella cheese

Instructions

  1. Saute chopped onion in butter until tender.
  2. Add tomato sauce to the onion and heat to boil for 1 minute.
  3. Pour the sauce over the halved yellow squash.
  4. Shake dried oregano over the top of the sauce and squash.
  5. Top with a generous layer of grated mozzarella cheese.
  6. Bake at 350°F for 30-45 minutes or until the squash is tender.
