Ingredients

  • 3 large potatoes
  • 2 large onions
  • 3 to 5 carrots
  • 2 medium zucchini
  • 3 medium yellow squash
  • 2 cups broccoli

Instructions

  1. Cut all vegetables to desired sizes.
  2. Mix all vegetables together well.
  3. Spray a 9 x 11-inch baking dish with Pam.
  4. Put all vegetables into the prepared baking dish.
  5. Cover and bake at 350°F for 30 to 45 minutes.
  6. Remove from oven.
  7. Stir well or turn vegetables to ensure even cooking.
  8. Continue baking until vegetables are tender.
