- Preheat oven to 375°F (190°C). Coat the bottom of an ovenproof casserole with 1 tablespoon of olive oil and place the whitefish fillets in the dish.
- In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add sliced onion, green pepper, minced garlic, chopped tomatoes, and bay leaf; sauté until vegetables are tender.
- Add salt, black pepper, and white wine to the skillet. Bring the mixture to a boil.
- Pour the vegetable and wine mixture over the fish fillets in the casserole dish.
- Bake uncovered in the preheated oven for 10 to 15 minutes, or until the fish flakes easily with a fork.
