  • 3 cloves garlic, minced
  • 1/4 cup butter
  • 1 (14 oz.) can stewed tomatoes
  • 1 teaspoon oregano
  • 1/8 teaspoon pepper
  • 1/2 cup Ouzo or 1/4 cup water
  • 1 teaspoon fennel seed, crushed
  • 1/2 cup crumbled Feta cheese

Instructions

  1. Thaw shrimp if frozen, peel and devein.
  2. In a large saucepan, cook chopped onions, parsley, and minced garlic in 2 tablespoons of butter until the onion is tender.
  3. Stir in undrained stewed tomatoes, oregano, and pepper. Bring to a boil and reduce heat.
  4. Simmer, covered, for 20 minutes.
  5. Stir in water or Ouzo and crushed fennel seed.
  6. Simmer, uncovered, for an additional 10 minutes.
  7. Serve topped with crumbled Feta cheese.

Tips & Substitutions

For a lighter version, substitute half of the butter with olive oil. If you don't have Ouzo, white wine or lemon juice can work as alternatives. Fresh herbs like dill or basil can replace parsley for a different flavor profile. Ensure the shrimp is cooked just until pink for optimal texture. To elevate the dish, consider adding some red pepper flakes for heat.

Serving Suggestions

Serve Athean Shrimp over a bed of rice or alongside crusty bread to soak up the flavorful sauce. Pair with a light salad or steamed vegetables for a complete meal. This dish pairs beautifully with Mediterranean recipes, enhancing the overall dining experience. A glass of chilled white wine complements the flavors wonderfully.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 2 days. To reheat, gently warm in a skillet over low heat, adding a splash of water or broth to prevent drying out. Avoid microwaving, as it can make the shrimp rubbery. This dish is best enjoyed fresh.

Frequently Asked Questions

Can I use frozen shrimp for this recipe?

Yes, frozen shrimp works perfectly! Just ensure to thaw them completely and pat dry before cooking. This helps achieve a better texture and prevents excess water from affecting the sauce.

What can I substitute for Feta cheese?

If you're not a fan of Feta, you can use goat cheese or ricotta for a creamier texture. Alternatively, a dairy-free cheese can be used for a vegan option, keeping the dish flavorful.

Is this dish spicy?

The recipe as written is not spicy, but you can easily adjust the heat by adding red pepper flakes or a dash of hot sauce. This allows you to customize the spice level to your preference.
